Our miso is hand crafted with pure water and carefully selected ingredients using traditional methods and naturally aged from one and a half years up to two years.

How to store
◆Store in a refrigerator. Keep away from sunlight to prevent color change. Miso doesn't get hard even in a freezer.
◆In Japan, the Best-before dates are displayed in order of the year, month, and day.
- Easy Quick Miso Soup ( 2 servings )

Ingredients
- Tofu…1/4 block of tofu
(cut into 1.5cm cubes) - Dried wakame seaweed…
1 teaspoon - Finely chopped Japanese leek …
1 tablespoon - Water …1.5~2 cups
- Miso…1~1.5 tablespoons
- Granulated broth …
2g(=2/3 tea spoon)~

- Tofu…1/4 block of tofu
Procedure
- Pour the water and half amount of granulated broth in a pot and bring it to a boil. Add the tofu and cook for about 1 minute. Then add the wakame seaweed and bring it to a boil again.
- Turn off the heat and dissolve the miso, add Japanese leek and rest of granulated broth. Stir and serve.
About Dashi (Broth)
◆It’s really common to use Dashi for many Japanese cuisines like miso soup, rolled- omelette, fried vegetables, takoyaki, stewed dishes and so on. There are various Dashi.
◆Please choose as your favor and it's possible to mix some Dashi.
煮干し…(Niboshi) Dried small sardines
昆布…(Kombu)Kombu seaweed
かつお節…(Katsuo bushi) Dried bonito flakes
ほんだし…(Hondashi) Popular granulated broth
- Sweet Miso Sauce

Ingredients
- 1 tablespoon Red Miso
- 1-2 tablespoons sugar
- 1~2 tablespoons dashi (fish broth)
or water
Procedure
- Mix well all ingredients in a small bowl.
- Cook in a saucepan on low heat or microwave for 20-30 seconds on low (600w) and mix well.
Tips
This sweet miso sauce is for Tofu, Fried eggplants, Tonkatsu and so on.
Please keep an eye on it so it doesn't burn.
- Garlic Miso Chicken ( 2 servings )

Ingredients
- 3 tablespoons miso
- 1 teaspoon grated garlic
- 200g bite-sized chicken pieces
- One quarter cabbage (chopped)
- One large onion (sliced)
Procedure
- Rub chicken, 2 spoons miso and garlic in a bowl or plastic bag and marinate in the refrigerator for an hour or more.
- Sauté chicken lightly in a frying pan.
- Then add vegetables, 1 spoon miso and braise for 3-4 minutes. Open the lid and mix all the ingredients.
Tips
Add some chili as your preference.
Sliced pork also can be used.
This dish goes well with steamed rice and beer!
